Ingredients
• 1 cup long grain rice • 2 cups chicken broth • 1 stick (½ cup) butter • ¼ cup heavy cream • 2 tbsp fresh parsley, chopped • 1 tbsp fresh chives, chopped • 1 tsp garlic powder • ½ tsp onion powder • Salt and pepper to taste • ¼ cup grated Parmesan cheese
Instructions
- Preheat oven to 350°F
- Grease 8×8 inch baking dish
- Rinse rice in fine mesh strainer
- In saucepan, bring chicken broth to boil
- Add rice, reduce heat, cover and simmer 18 minutes
- Remove from heat, let stand 5 minutes
- Fluff rice with fork
- Stir in butter until melted
- Add heavy cream and seasonings
- Transfer to prepared baking dish
- Cover with foil and bake 20 minutes
- Stir in fresh herbs and Parmesan
- Bake uncovered 10 minutes more
- Let stand 5 minutes before serving
