Ingredients
• 1 cup frozen tater tots (or hash browns)
• ½ lb (225g) breakfast sausage (pork, turkey, or plant-based)
• 2 tbsp butter (or oil)
• 2 tbsp all-purpose flour (or cornstarch for GF)
• 1 cup milk (dairy or plant-based)
• Salt & black pepper to taste
• 3 large eggs
• ¼ tsp garlic powder (optional)
• Fresh chives or green onions, chopped (for garnish)
Instructions
- Cook tater tots: Air fry, bake, or pan-fry according to package directions until golden and crispy. Set aside.
- In a skillet over medium heat, cook sausage until browned and crumbled. Remove and set aside, leaving drippings in the pan.
- Melt butter in the same skillet. Whisk in flour and cook 1 minute to form a roux.
- Gradually whisk in milk. Cook 3–5 minutes, stirring constantly, until thickened into a smooth gravy. Season with salt and pepper.
- In a separate bowl, scramble eggs with a splash of milk, garlic powder, salt, and pepper. Cook in a non-stick skillet until fluffy.
- Assemble bowls:
→ Base: Crispy tater tots
→ Layer: Scrambled eggs
→ Top: Sausage crumbles
→ Pour: Warm sausage gravy over everything - Garnish with fresh chives or green onions. Serve hot!
