Ingredients

• 1 cup frozen tater tots (or hash browns)
• ½ lb (225g) breakfast sausage (pork, turkey, or plant-based)
• 2 tbsp butter (or oil)
• 2 tbsp all-purpose flour (or cornstarch for GF)
• 1 cup milk (dairy or plant-based)
• Salt & black pepper to taste
• 3 large eggs
• ¼ tsp garlic powder (optional)
• Fresh chives or green onions, chopped (for garnish)


Instructions

  1. Cook tater tots: Air fry, bake, or pan-fry according to package directions until golden and crispy. Set aside.
  2. In a skillet over medium heat, cook sausage until browned and crumbled. Remove and set aside, leaving drippings in the pan.
  3. Melt butter in the same skillet. Whisk in flour and cook 1 minute to form a roux.
  4. Gradually whisk in milk. Cook 3–5 minutes, stirring constantly, until thickened into a smooth gravy. Season with salt and pepper.
  5. In a separate bowl, scramble eggs with a splash of milk, garlic powder, salt, and pepper. Cook in a non-stick skillet until fluffy.
  6. Assemble bowls:
    → Base: Crispy tater tots
    → Layer: Scrambled eggs
    → Top: Sausage crumbles
    → Pour: Warm sausage gravy over everything
  7. Garnish with fresh chives or green onions. Serve hot!
