Juicy, flavorful chicken glazed with a sweet and savory teriyaki sauce!


Ingredients

lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces

½ cup low-sodium soy sauce

¼ cup honey or maple syrup

2 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp grated fresh ginger

1 tbsp cornstarch + 2 tbsp water (for thickening)

2 tbsp chopped green onions (for garnish)

1 tsp sesame seeds (optional)

Wooden skewers (soaked in water for 20 minutes if grilling)


Instructions

In a small saucepan, whisk together soy sauce, honey (or maple syrup), rice vinegar, sesame oil, garlic, and ginger.

Bring to a simmer, then stir in cornstarch slurry (cornstarch + water) and cook until thickened. Set aside to cool.

Place chicken pieces in a bowl or zip-top bag and pour in half of the cooled teriyaki sauce. Marinate for at least 30 minutes.

Thread chicken onto skewers.

Grill or broil skewers over medium-high heat for 8–10 minutes, turning and basting with reserved sauce, until chicken is cooked through.

Garnish with green onions and sesame seeds. Serve hot!
