A bold, colorful salad packed with crunch, flavor, and creamy peanut bliss!


Ingredients

For the Salad:

2 cups cooked shredded chicken breast

2 cups shredded green cabbage

1 cup shredded purple cabbage

1 cup shredded carrots

½ red bell pepper, thinly sliced

½ cup snap peas, sliced on a diagonal

2 green onions, thinly sliced

¼ cup chopped fresh cilantro

¼ cup chopped roasted peanuts

½ cup crispy wonton strips

For the Peanut Dressing:

¼ cup creamy peanut butter

2 tbsp rice vinegar

1 tbsp low-sodium soy sauce

1 tbsp honey or maple syrup

1 tsp sesame oil

1 tsp grated fresh ginger

1 clove garlic, minced

2–3 tbsp warm water (to thin as needed)


Instructions

In a large bowl, combine shredded chicken, cabbage, carrots, bell pepper, snap peas, green onions, and cilantro.

In a small bowl, whisk together all dressing ingredients until smooth and creamy. Add water to thin if needed.

Pour dressing over the salad and toss until everything is well coated.

Top with chopped peanuts and crispy wonton strips just before serving.

Serve chilled or at room temperature for a refreshing crunch.
