Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with foil or a wire rack for crispier results.
- Lay bacon strips in a single layer on the pan (don’t overlap).
- Bake 12–15 minutes, until partially cooked and fat has rendered but not fully crispy.
- While bacon bakes, prepare the glaze: In a small bowl, mix maple syrup, brown sugar (if using), smoked paprika, and cayenne.
- Remove bacon from oven. Carefully brush both sides with maple glaze.
- Return to oven and bake 5–8 more minutes, until deeply glazed, bubbly, and crispy.
- Watch closely—sugar can burn quickly!
- Transfer to a plate lined with paper towels to drain excess grease.
- Let cool 1–2 minutes—the glaze will set as it cools.
