Ingredients
• 2 lbs ground beef • 1 large onion, diced • 3 cloves garlic, minced • 1 can (15oz) kidney beans, drained • 1 can (15oz) pinto beans, drained • 1 can (15oz) diced tomatoes • 1 can (6oz) tomato paste • 2 cups beef broth • 2 tbsp chili powder • 1 tbsp paprika • 1 tsp cumin • 1 tsp oregano • ½ tsp cayenne pepper • 2 bay leaves • Salt and pepper to taste
Instructions
- In large pot, brown ground beef over medium-high heat
- Add onion and garlic, cook until softened
- Drain excess fat from meat mixture
- Add diced tomatoes, tomato paste, and beef broth
- Stir in kidney beans and pinto beans
- Add chili powder, paprika, cumin, oregano, and cayenne
- Add bay leaves, salt, and pepper
- Bring to boil, then reduce heat
- Simmer uncovered 45-60 minutes, stirring occasionally
- Remove bay leaves before serving
- Serve hot with shredded cheese and crackers
