Ingredients

2 cups grated zucchini (about 2 medium)
1 egg
¼ cup grated Parmesan cheese
¼ cup shredded cheddar cheese
¼ cup breadcrumbs (or almond flour for low carb)
1 clove garlic, minced
Salt & pepper to taste
Oil for pan-frying
Instructions
Grate zucchini and squeeze out excess moisture using a clean towel.
In a bowl, mix zucchini, egg, cheeses, breadcrumbs, garlic, salt, and pepper.
Scoop mixture and form into small patties.
Heat oil in a skillet over medium heat.
Fry patties 2–3 minutes per side until golden and crispy.
Drain on paper towels and serve warm!
