• 1 cup strong brewed coffee or 1 shot espresso, cooled (or ½ cup instant coffee + ½ cup cold water)
• ½ cup unsweetened almond milk (or oat, dairy, or soy milk)
• 2 tbsp pumpkin puree (unsweetened)
• 1–2 tbsp maple syrup or honey (adjust to taste)
• ½ tsp pumpkin pie spice (plus extra for garnish)
• ½ tsp vanilla extract
• 1 cup ice cubes
Instructions
- In a blender or shaker, combine cooled coffee, almond milk, pumpkin puree, maple syrup, pumpkin pie spice, and vanilla.
- Blend or shake vigorously until smooth and frothy.
- Fill a tall glass with ice cubes.
- Pour the latte mixture over ice.
- Stir gently and enjoy immediately!
- Optional: Sprinkle a pinch of pumpkin pie spice on top for that signature look.
