Pineapple Lemon Drop Cocktail

  • For the rim:
    • 1 tbsp granulated sugar
    • ½ tsp lemon zest (optional, for extra aroma)
  • For the cocktail:
    • 1½ oz (45ml) vodka
    • ¾ oz (22ml) fresh lemon juice
    • ½ oz (15ml) pineapple juice (100% juice, not from concentrate)
    • ½ oz (15ml) simple syrup (or adjust to taste)
    • Ice
  • Garnish:
    • Lemon twist or pineapple wedge

Instructions

  1. Prep the glass: Mix sugar and lemon zest (if using) on a small plate. Rub lemon wedge around rim of a chilled coupe or rocks glass. Dip rim into sugar mixture; set aside.
  2. Shake: In a cocktail shaker, combine vodka, lemon juice, pineapple juice, and simple syrup. Add ice. Shake vigorously for 15–20 seconds until well-chilled.
  3. Strain & serve:
    • For up: Strain into prepared coupe glass.
    • For on the rocks: Fill rimmed rocks glass with fresh ice; strain cocktail over top.
  4. Garnish with a lemon twist or pineapple wedge.
