Mini Lunchbox Pizzas

Description

Make lunch exciting with these Mini Lunchbox Pizzas! Bite-sized, customizable, and perfect for packing — cheesy, colorful, and ready in 20 minutes 🍕🎒✨

 


Ingredients

– 4 mini English muffins, split (or 8 mini pitas) 🫓

– 1/2 cup (120 ml) tomato pizza sauce 🍅

– 200 g shredded mozzarella cheese 🧀

– 8–12 cherry tomatoes, halved 🍅

– 1 small bell pepper, thinly sliced 🌶️

– 100 g sliced ham or turkey (optional) 🍗

– 12 black or green olives, sliced 🫒

– 1 tbsp olive oil 🫒

– 1 tsp dried oregano or Italian seasoning 🌿

– Salt & pepper to taste 🧂

– Fresh basil leaves for garnish 🌱


Instructions

1 Preheat your oven or toaster oven to 200°C (400°F). Line a baking tray with parchment paper.

2 Place the split English muffins cut-side up on the tray and brush each lightly with olive oil 🫒.

3 Spread about 1 tablespoon of tomato sauce on each muffin half 🍅.

4 Sprinkle a generous pinch of shredded mozzarella on each base 🧀.

5 Top the minis with cherry tomato halves, bell pepper slices, olives, and slices of ham or turkey as desired 🍅🌶️🍗.

6 Sprinkle a little dried oregano and season with salt and pepper 🌿🧂.

7 Bake in the oven for 8–10 minutes, or until the cheese is melted and bubbly and edges are golden 🧀🔥.

8 Remove from oven and let cool for 2–3 minutes. Garnish with fresh basil leaves 🌱.

9 Pack cooled mini pizzas into lunchbox compartments or airtight containers. Add a small ice pack if packing for later 🎒❄️.

10 Serve warm or at room temperature — enjoy your easy, kid-friendly lunchbox pizzas! 😋
