Ingredients

– 3 ripe bananas 🍌 (about 300 g) — mashed

– 125 g unsalted butter 🧈 (room temperature) — 1/2 cup

– 150 g granulated sugar 🍬 (3/4 cup)

– 50 g light brown sugar 🍯 (1/4 cup) — optional for deeper flavor

– 2 large eggs 🥚

– 1 tsp vanilla extract 🍦 (5 ml)

– 250 g all-purpose flour 🌾 (2 cups)

– 1 tsp baking powder 🧁

– 1/2 tsp baking soda 🥄

– 1/2 tsp salt 🧂

– 120 g sour cream or Greek yogurt 🥛 (1/2 cup) — for extra moisture

– 100 g walnuts, chopped 🥜 (about 1 cup)

– Optional: 1/2 tsp ground cinnamon 🌰


Instructions

 

1 Preheat the oven to 175°C (350°F). Grease and flour a 9-inch (23 cm) round or loaf pan, or line with parchment paper.

2 In a medium bowl, mash the ripe bananas with a fork until mostly smooth.

3 In a large bowl, cream the room-temperature butter and sugars together until light and fluffy (about 2–3 minutes).

4 Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas until combined.

5 In a separate bowl, whisk together the flour, baking powder, baking soda, salt and optional cinnamon.

6 Add the dry ingredients to the wet mixture in two additions, alternating with the sour cream (begin and end with the dry ingredients). Mix until just combined—do not overmix.

7 Fold in the chopped walnuts, reserving a handful to sprinkle on top if desired.

8 Pour the batter into the prepared pan and smooth the top. Sprinkle reserved walnuts over the batter.

9 Bake for 45–55 minutes (loaf) or 35–45 minutes (round cake), or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

10 Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

11 Serve plain, with a dusting of powdered sugar, or a smear of butter or cream cheese frosting if you like. Enjoy with a cup of coffee or tea!
