Brighten your table with this vibrant Mediterranean bean salad with creamy feta—quick, healthy, and bursting with flavor!
Ingredients
– 1 can (400 g) mixed beans, drained 🫘
– 200 g cherry tomatoes, halved 🍅
– 1 medium cucumber, diced 🥒
– 1 small red onion, thinly sliced 🧅
– 100 g feta cheese, crumbled 🧀
– 80 g Kalamata olives, pitted 🫒
– 1/4 cup extra virgin olive oil 🫒
– 2 tbsp lemon juice 🍋
– 1 tbsp red wine vinegar 🍷
– 1/2 cup fresh parsley, chopped 🌿
– 1 tsp dried oregano 🌿
– Salt and pepper to taste 🧂🌶️
Instructions
1 Drain and rinse the mixed beans and place in a large bowl.
2 Add halved cherry tomatoes, diced cucumber, and sliced red onion.
3 Crumble in the feta and add Kalamata olives and chopped parsley.
4 Whisk together olive oil, lemon juice, red wine vinegar, dried oregano, salt and pepper.
5 Pour dressing over the salad and toss gently to combine.
6 Taste and adjust seasoning if needed.
7 Chill for 15 minutes to meld flavors or serve immediately.
