Ingredients
 2 cups (197 g) superfine blanched almond flour
 1 tbsp (12 g) aluminum-free baking powder
 1 cup (212 g) 4% milkfat cottage cheese
 4 tbsp (54 g) garlic butter, melted
Instructions
1. Preheat oven to 350°F (177°C) and grease 9 cavities of a standard 12-cup muffin pan.
2. In a large bowl, whisk together almond flour and baking powder until well combined.
3. Add cottage cheese and melted garlic butter, mixing until fully incorporated.
4. Scoop the mixture into the prepared muffin pan using an ice cream scoop.
5. Bake for 20-25 minutes, or until golden brown. Let cool slightly before serving. Optionally, brush with more melted garlic butter and garnish with parsley.
