Ingredients
• 10 cups popped popcorn (unsalted, unbuttered)
• 1 tbsp butter or coconut oil
• 10 oz (about 4 cups) mini marshmallows
• ¼ cup corn syrup or honey (for extra hold & shine)
• 1 tsp vanilla extract
• Pinch of salt
• Optional mix-ins:
• ½ cup M&Ms, chocolate chips, or peanut butter chips
• Sprinkles (perfect for holidays!)
• Crushed pretzels or nuts for sweet & salty
Instructions
- Lightly grease your hands and a large bowl. Line a baking sheet with parchment paper.
- In a large pot over low heat, melt butter. Add marshmallows and corn syrup. Stir constantly until smooth and melted.
- Remove from heat. Stir in vanilla and salt.
- Pour warm mixture over popcorn. Gently fold with a silicone spatula until evenly coated (don’t crush the popcorn!).
- Fold in any optional mix-ins.
- Let cool 1–2 minutes (so it’s easier to handle but still sticky).
- Scoop handfuls and pack firmly into 4-inch balls using greased hands.
- Place on the tray and let set 15–20 minutes.
