Ingredients

• ½ cup brown sugar
• 1 egg
• 1 tsp vanilla extract
• 2 ¼ cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tsp baking powder
• ½ tsp salt
• ½ tsp ground cinnamon (optional, for warmth)
• Sprinkles, colored sugar, or icing (for decorating)


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat butter and both sugars until light and fluffy (2–3 minutes).
  3. Beat in egg and vanilla until smooth.
  4. In another bowl, whisk flour, baking powder, salt, and cinnamon (if using). Gradually add to wet ingredients, mixing until just combined.
  5. Scoop tablespoon-sized balls of dough and place on trays (they spread slightly).
  6. Bake 8–10 minutes, until edges are lightly golden but centers are still soft.
  7. Let cool on the tray 5 minutes—they’ll firm up as they cool. Then transfer to a wire rack.
  8. Decorate when completely cool with icing, sprinkles, or dust with powdered sugar.
