Chicken Cordon Bleu Casserole 🧀🍗

Ingredients

• 1 tbsp olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 lb (450g) cooked chicken, shredded or diced (rotisserie works great!)
• 1 cup diced ham or Canadian bacon
• 8 oz cream of chicken soup (or homemade: 1 cup broth + 3 tbsp flour + ½ cup milk)
• ½ cup sour cream or Greek yogurt
• 1 cup milk (dairy or plant-based)
• 1 cup shredded Swiss or Gruyère cheese (divided)
• ½ cup grated Parmesan cheese
• 2 cups uncooked egg noodles or rotini
• ½ tsp Dijon mustard (optional, for depth)
• Salt & pepper to taste
• Optional topping: ½ cup buttered breadcrumbs or crushed crackers


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, warm olive oil. Sauté onion 4–5 minutes until soft. Add garlic and cook 30 seconds more.
  3. Stir in uncooked pasta, chicken, ham, cream of chicken soup, sour cream, milk, Âľ cup Swiss, Parmesan, Dijon (if using), salt, and pepper. Mix well.
  4. Pour into the baking dish. Top with remaining ÂĽ cup Swiss.
  5. Cover with foil and bake 25 minutes.
  6. Uncover and bake 15–20 more minutes, until pasta is tender and top is golden.
  7. Let cool 5 minutes before serving—creamy, cheesy, and deeply satisfying!
