Ingredients
For the Chocolate Cookies:
1 cup almond flour
¼ cup unsweetened cocoa powder
½ tsp baking soda
¼ tsp salt
½ cup maple syrup or honey
¼ cup melted coconut oil or butter
1 tsp vanilla extract
1 tbsp water or milk (as needed)
For the Filling:
4 oz cream cheese, softened
2 tbsp creamy peanut butter
¼ cup powdered erythritol or monk fruit sweetener
1 tsp vanilla extract
Pinch of salt
Instructions
In a bowl, mix almond flour, cocoa powder, baking soda, and salt.
Add maple syrup, melted oil, vanilla, and water/milk as needed to form a thick dough.
Scoop small balls of dough and place on a lined baking sheet.
Bake at 350°F (175°C) for 10–12 minutes until set. Let cool completely.
For the filling: Beat cream cheese, peanut butter, powdered sweetener, vanilla, and salt until smooth.
Spread a spoonful of the filling onto the flat side of one cookie and gently press another on top to form a sandwich.
Chill in the fridge for best texture before serving.
