Ingredients
For the crust & crumble:
• 1 cup (2 sticks) unsalted butter, cold and cubed (or coconut oil)
• 2 cups all-purpose flour (plus more for dusting)
• ½ cup granulated sugar
• ¼ cup brown sugar
• ½ tsp salt
For the filling:
• 2 cups fresh or frozen peaches, peeled and diced (about 3 medium)
• ¼ cup brown sugar
• 1 tbsp cornstarch (to thicken juices)
• 1 tsp cinnamon
• ½ tsp vanilla extract
• Zest of ½ lemon (optional, for brightness)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- Make the crust/crumble: In a food processor or bowl, mix flour, sugars, and salt. Cut in cold butter until mixture resembles coarse crumbs. Set aside Âľ cup for the topping. Press the rest into the bottom of the pan to form the crust.
- Make the filling: In a bowl, toss peaches with brown sugar, cornstarch, cinnamon, vanilla, and lemon zest. Spread evenly over the crust.
- Sprinkle reserved crumb mixture over the top.
- Bake 35–40 minutes, until golden and bubbly.
- Let cool completely before slicing—this helps them hold their shape.
