Ingredients

• 8 oz penne or rigatoni (or gluten-free pasta)
• 1 tbsp olive oil
• 1 lb (450g) boneless chicken breast or thighs, sliced into strips
• 1 bell pepper (any color), sliced
• 1 small onion, sliced
• 2 cloves garlic, minced
• 1–2 tsp Cajun seasoning (or homemade: ½ tsp each paprika, garlic powder, onion powder, oregano; ¼ tsp cayenne, thyme, black pepper)
• ½ cup dry white wine (optional, or sub with chicken broth)
• ½ cup heavy cream or full-fat coconut milk
• ½ cup shredded cheddar or mozzarella cheese
• 2 tbsp butter (optional, for richness)
• Salt to taste
• Fresh parsley or green onions, chopped (for garnish)


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet over medium-high heat, warm olive oil. Sauté chicken until browned and cooked through. Remove and set aside.
  3. In the same pan, add bell pepper and onion. Cook 5–6 minutes until tender-crisp. Add garlic and cook 30 seconds more.
  4. Stir in Cajun seasoning and cook 30 seconds to toast the spices.
  5. Pour in white wine (if using) and simmer 1–2 minutes to deglaze the pan.
  6. Reduce heat to low. Stir in heavy cream, cheese, and butter (if using). Mix until smooth and creamy.
  7. Return chicken to the pan. Add cooked pasta and toss gently to coat. Warm through 1–2 minutes.
  8. Taste and adjust seasoning—add more spice, salt, or a squeeze of lemon juice for brightness.
  9. Serve hot, garnished with fresh parsley or green onions.

Great with garlic bread or a crisp green salad!

💡 Make it heartier: Add mushrooms, spinach, or sun-dried tomatoes.
