Ingredients
4 firm white fish fillets (cod, halibut, or mahi mahi)
3 TB melted butter
Juice and zest from 1 medium lemon
½ tsp kosher salt, divided
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
¼ tsp freshly ground black pepper
3 TB olive oil
Freshly chopped basil or parsley leaves, for garnish
Extra lemon slices for serving
Instructions
1. Pat-dry the fish fillets with paper towels to remove excess moisture.
2. In a bowl, mix melted butter, lemon juice, zest, and ¼ tsp kosher salt. Adjust salt to taste.
3. In another bowl, combine the remaining ¼ tsp kosher salt, paprika, garlic powder, onion powder, and black pepper. Coat the fish fillets evenly with this spice mixture.
4. Heat olive oil in a large skillet over medium-high heat. Cook 2 fillets at a time for even browning, about 2-3 minutes per side, until opaque and firm. Drizzle some lemon butter sauce while cooking.
5. Serve the fish with the remaining lemon butter sauce, garnished with basil or parsley, and lemon wedges.
