Ingredients
• 1 lb (450g) lean ground beef
• 1/2 cup diced onion
• 1/2 cup diced bell pepper (orange or red for Halloween colors)
• 1 clove garlic, minced
• 1/2 tsp cumin
• 1/2 tsp smoked paprika
• 1/4 tsp chili powder
• Salt & pepper to taste
• 1/2 cup tomato sauce (no sugar added)
• 6 whole wheat or gluten-free tortillas (8-inch)
• 1 egg (for egg wash – optional)
• Cooking spray or olive oil
Instructions
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add onion, bell pepper, and garlic. Sauté 5–6 minutes until soft.
- Stir in cumin, paprika, chili powder, salt, pepper, and tomato sauce. Simmer 5 minutes. Remove from heat and let cool slightly.
- Spoon about 1/3 cup filling onto each tortilla. Fold over into a half-moon shape and press edges with a fork to seal.
- Optional: Brush tops with beaten egg for golden shine.
- Heat a skillet or grill pan with a little oil or spray. Cook turnovers 3–4 minutes per side, until golden and crisp.
- Serve warm with a side of sour cream, guacamole, or salsa!
Tip: Cut a small “crust” face or bat shape on top before cooking for a fun Halloween twist!
