Ingredients
75 grams Coconut Flour
16 grams Psyllium Husk
125 ml Warm Water
100 ml Olive Oil
1/2 Tsp Salt
1 Tsp Xanthan Gum
1 Tsp Baking Powder
6 Eggs
Instructions
1. Add warm water to psyllium husk and set aside.
2. In a bowl, mix coconut flour, xanthan gum, baking powder, and salt.
3. In another bowl, whisk eggs with olive oil.
4. Combine psyllium husk mixture with egg mixture and beat well.
5. Add dry ingredients and mix until combined.
6. Pour into a greased loaf tin lined with parchment paper.
7. Bake for 40 minutes at 170°C in a pre-heated oven.
8. Cool before removing from the tin, slice, and serve.
