Ingredients
3 cups almond flour
1/2 cup coconut flour
1/2 tsp salt
1 1/2 cup unsalted butter, softened
1 cup monk fruit blend sweetener
1 tsp vanilla
1 tsp strawberry extract
Pink food coloring
1/4 cup sugar-free dark chocolate chips,
Instructions
1. Sift together almond flour, coconut flour, and salt; set aside.
2. In a medium bowl, cream together butter and monk fruit with an electric mixer.
3. Gradually stir in dry ingredients until combined.
4. Divide dough into three bowls. Mix vanilla in the first, strawberry extract and pink food coloring in the second, and melted chocolate in the third.
5. Pinch equal parts of each dough, press together, and shape into balls. Flatten on a parchment-lined tray, spacing 1 inch apart.
6. Chill for 30 minutes, then bake at 350°F for 8 minutes.
7. Let cool completely on the tray before transferring to a wire rack.
