Keto Sausage Cheddar Biscuits with Sausage Gravy: A Low-Carb Comfort Food Delight

Ingredients

FOR THE BISCUITS :
🧀 2 oz cream cheese
🧀 2 cups mozzarella
🥚 2 eggs
🌰 1 cup almond flour
🧀 2 oz thinly sliced cheddar cheese
🌭 6 cooked sausage patties

FOR THE GRAVY :
🥩 1 pound keto country breakfast sausage
🌿 1/2 tsp xanthan gum
🌱 1 tsp ground sage
🌶️ 1/4 tsp crushed red pepper flakes (optional)
🥛 1 cup unsweetened almond milk (or coconut milk)
🥥 2 cups heavy cream (or canned coconut milk for dairy-free)
🧂 Pink salt, to taste
🧂 Cracked black pepper, to taste


Instructions

FOR THE BISCUITS :
1. Preheat your oven to 425°F (220°C).
2. In a microwave-safe bowl, combine the cream cheese and mozzarella. Microwave in 30-second intervals until the cheese is soft and melty. Mix until creamy.
3. In a separate bowl, beat the eggs and combine them with the almond flour. Add the melted cheese mixture and stir until well combined. The dough may be sticky, which is perfectly fine!
4. Wet your hands and form 3-inch dough balls, then flatten them slightly.
5. Place a sausage patty and a slice of cheddar cheese on each dough piece, wrapping the dough around the filling.
6. Arrange the stuffed dough balls on a parchment-lined cookie tray and bake for 12-15 minutes, or until golden and set.
7. For an extra cheesy touch, top with more cheese before serving. 🤤

FOR THE GRAVY :
1. Heat a large skillet over medium-high heat.
2. Add the sausage, breaking it into small chunks with a meat chopper or wooden spoon. Cook until browned and cooked through, about 8 to 10 minutes.
3. Remove the cooked sausage with a slotted spoon and set aside.
4. Lower the heat to medium-low and sprinkle in the xanthan gum, sage, and red pepper flakes.
5. Whisk in the almond milk and increase the heat to medium. Bring the mixture to a simmer, stirring frequently until it thickens, about 2 to 3 minutes.
6. Whisk in the heavy cream and adjust seasonings to taste.
7. Return the cooked sausage to the skillet and stir to combine.
