Ingredients
1/3 cup Unsalted butter (softened; or coconut oil for dairy-free)
1/4 cup Besti Monk Fruit Allulose Blend
2 large Eggs
1/2 tsp Vanilla extract
1/2 tsp Baking powder
1/4 tsp Sea salt
1/2 cup Wholesome Yum Coconut Flour
1/4 tsp Xanthan gum (optional)
Optional Toppings:
2/3 Keto Cream Cheese Frosting
4 tsp Sugar-free sprinkles
Instructions
1. Preheat the oven to 350°F (176°C) and line a baking sheet with parchment paper.
2. In a bowl, beat the butter and sweetener until fluffy.
3. Mix in the eggs, vanilla, baking powder, and sea salt.
4. Gradually add the coconut flour and mix well.
5. Sprinkle xanthan gum over the dough and mix again. Let it sit for a few minutes.
6. For baking, scoop dough onto the sheet and flatten, or chill and roll out for shapes.
7. Bake for 7-8 minutes until firm but soft. Cool completely before frosting.
8. Spread frosting and add sprinkles if desired.
