Thick, hearty cabbage slices roasted to tender perfection and smothered in bold toppings — these loaded cabbage steaks are a low-carb, keto-friendly alternative to potato wedges or fries, perfect as a side or main dish!
Ingredients
1 large green or red cabbage (cut into 1-inch thick slices)
2 tbsp olive oil or avocado oil
½ tsp garlic powder
½ tsp smoked paprika
¼ tsp salt
¼ tsp black pepper
¼ cup shredded cheddar cheese (or mozzarella)
2 tbsp crumbled cooked bacon
1 tbsp sour cream or Greek yogurt
1 tbsp green onions, sliced (for garnish)
Optional: Hot sauce or ranch for dipping
FOR KETO VERSION:
Use full-fat cheese and sour cream. For extra richness, drizzle with melted butter or keto gravy.
Instructions
Preheat oven to 400°F (200°C) . Line a baking sheet with parchment paper.
Cut cabbage head into thick “steaks” (about 1–2 inches thick). Remove any loose outer leaves.
Brush both sides of each cabbage steak with olive oil , then sprinkle with garlic powder , paprika , salt , and pepper .
Place on the baking sheet and roast for 20–25 minutes , flipping halfway through until golden and tender.
Top warm cabbage steaks with cheddar cheese , crumbled bacon , sour cream , and green onions .
Serve immediately as a main or side dish — enjoy like you would a loaded baked potato!
