- 1 tbsp olive oil or butter
- 1 lb (450g) medium shrimp, peeled, deveined, tails removed, chopped
- ½ cup diced yellow onion
- ½ cup diced green bell pepper
- 2 garlic cloves, minced
- 1 tsp Cajun seasoning (adjust to taste)
- 8 oz (225g) cream cheese, softened
- ½ cup sour cream
- ½ cup mayonnaise
- 1½ cups shredded sharp cheddar cheese
- ½ cup shredded Monterey Jack or pepper jack cheese
- 2 green onions, sliced (for garnish)
- Optional: dash of hot sauce, lemon juice, or diced jalapeño
For serving:
- Toasted baguette slices
- Crackers
- Celery sticks or bell pepper strips
Instructions
- Preheat oven to 375°F (190°C). Lightly grease an 8×8″ baking dish or 10″ cast-iron skillet.
- Sauté aromatics: In a skillet, heat oil over medium heat. Add onion and bell pepper; cook 4–5 min until soft. Add garlic and Cajun seasoning; cook 30 sec.
- Add shrimp: Stir in chopped shrimp; cook 2–3 min until just pink (they’ll finish cooking in the oven). Remove from heat.
- Make dip base: In a large bowl, combine cream cheese, sour cream, and mayonnaise until smooth. Stir in cooked shrimp mixture and 1 cup of the cheddar and Monterey Jack cheeses.
- Assemble: Spread mixture into baking dish. Top with remaining ½ cup cheeses.
- Bake 20–25 minutes, until bubbly and lightly golden on top.
- Garnish with green onions and serve warm with your favorite dippers!
💡 Make ahead: Assemble dip (without baking) up to 1 day ahead. Cover and refrigerate; add 5–10 min to bake time if cold.
