Ingredients
Cupcakes
– 1 ¼ cup all-purpose flour
– 1 ¼ teaspoon baking powder
– ½ teaspoon salt
– ½ cup sugar
– 2 large eggs, beaten
– ½ cup whole milk
– 1 Tablespoon vanilla bean paste
– ½ cup vegetable oil Buttercream Frosting
– 4 cups powdered sugar, sifted
– 1 cup unsalted butter (2 sticks)
– 2-4 Tablespoon heavy whipping cream
– 1 tsp blue food coloring (optional) Rainbow/Clouds
– 9 Airhead Xtremes Rainbow Berry Candy
– 72 white sugar pearls (8 per cupcake)
Instructions
1. In a bowl, mix flour, baking powder, salt, and sugar.
2. Gradually add milk, oil, and eggs, stirring well.
3. Incorporate vanilla bean paste and mix for 1-2 minutes.
4. Preheat oven to 350°F and line muffin pan with cupcake liners.
5. Fill liners ¾ full with batter using an ice cream scoop.
6. Bake for 20 minutes; let cool completely.
7. For frosting, beat softened butter and sifted sugar together.
8. Gradually add heavy cream and mix until thickened.
9. Add food coloring and mix until combined.
10. Cut slits in cooled cupcakes for rainbows.
11. Pipe frosting under and around the rainbow.
12. Add sugar pearls for clouds.
