1 cup warm milk (whole milk preferred, 90°F to 100°F)
4 cups bread flour (spooned and leveled)
2 large eggs (room temperature)
1 teaspoon salt
8 tablespoons unsalted butter (room temperature)
3 tablespoons granulated sugar (for donuts)
3 cups frozen raspberries
1 teaspoon lemon juice
8 ounces cream cheese
¾ cup heavy whipping cream
2 tablespoons granulated sugar (for cheesecake filling)
2 cups granulated sugar (for coating)
Vegetable oil (for frying)
Instructions
1. In a bowl, mix warm milk, yeast, and sugar; let foam for 5 minutes.
2. Add flour, eggs, and salt; mix until combined.
3. Gradually add butter, mixing until smooth and elastic.
4. Let the dough rise in a greased bowl for 60-90 minutes.
5. Prepare raspberry filling by simmering raspberries, sugar, and lemon juice until thickened.
6. For cheesecake filling, whisk cream cheese, heavy cream, sugar, and vanilla until thick.
7. Shape dough into balls, let rise for 30 minutes.
8. Heat oil to 330°F-350°F; fry donuts until golden brown.
9. Toss in sugar, fill with raspberry and cheesecake fillings.
