Ingredients
20g butter
2 tbsp olive oil
2 cups whole blanched almonds
Spice mix:
2 tsp salt
1 tsp caster sugar
1/2 tsp smoked paprika
1 tsp sweet paprika
1/2 tsp ground cumin
pinch cayenne pepper
Instructions
1. Make the spice mix: Combine all ingredients in a bowl and mix well.
2. Melt butter and oil in a frying pan over medium heat. Add almonds and cook, stirring, for 5 minutes or until lightly browned. Remove from heat.
3. Drain excess oil, add spice mix, and toss to coat. Return to heat.
4. Cook, stirring often, for 2 minutes or until golden. Spread on a tray to cool slightly. Serve warm or cold.
