Strawberry Layer:
- 2 cups fresh strawberries, diced
- 2 tbsp maple syrup
- 1 tsp fresh lemon juice
Cheesecake Filling:
- 8 oz light cream cheese, softened
- 1 cup plain Greek yogurt
- ΒΌ cup maple syrup
- 1 tsp vanilla extract
Crumble Layer:
- 1Β½ cups crushed whole-grain vanilla cookies or graham crackers
- 2 tbsp melted butter
- Β½ tsp ground cinnamon
Garnish:
- Sliced fresh strawberries
- Fresh mint leaves (optional)
Instructions
- In a small bowl, combine the diced strawberries, maple syrup, and lemon juice. Let them sit for 10 minutes.
- In a large bowl, beat the cream cheese until smooth.
- Add the Greek yogurt, maple syrup, and vanilla extract, then beat until light and creamy.
- In another bowl, mix the crushed cookies with the melted butter and cinnamon until evenly coated.
- Assemble the dessert cups by adding a layer of cookie crumble, followed by a layer of cheesecake filling, then a layer of strawberries.
- Repeat the layers until the cups are full, finishing with strawberries and a sprinkle of cookie crumble.
- Garnish with fresh strawberry slices and mint leaves, if desired.
- Refrigerate for at least 1 hour before serving.
