• 2 cups whole-grain crispy rice cereal
• ½ cup mini marshmallows (or vegan)
• ¼ cup unsweetened shredded coconut
• ¼ cup roasted peanuts, lightly chopped
• 1 teaspoon pure vanilla extract
• Pinch of sea salt
Instructions
• Line a baking sheet with parchment paper and lightly grease a large mixing bowl.
• In a microwave-safe bowl, melt white chocolate and peanut butter in 30-second intervals, stirring until smooth.
• Stir in vanilla and salt, then gently fold in rice cereal, marshmallows, coconut, and peanuts until evenly coated.
