For the Crust:

  • 2 cups vanilla wafer crumbs
  • 1/2 cup melted butter
  • 2 tbsp sugar

For the Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

Banana Pudding Layer:

  • 2 ripe bananas, sliced
  • 1 cup vanilla pudding (prepared or instant)
  • 1 cup whipped cream or whipped topping
  • 1 cup crushed vanilla wafers

Topping:

 

  • Extra banana slices
  • Whipped cream
  • Crushed vanilla wafers

Instructions

  1. Preheat oven to 325°F (165°C). Grease a springform pan.
  2. Mix vanilla wafer crumbs, melted butter, and sugar. Press into pan to form crust.
  3. Bake crust for 8–10 minutes, then cool.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, then mix in vanilla and sour cream.
  6. Pour filling over crust and bake for 50–60 minutes until center is slightly set.
  7. Cool completely, then refrigerate at least 4 hours.
  8. Spread vanilla pudding over chilled cheesecake.
  9. Layer sliced bananas and crushed vanilla wafers.
  10. Top with whipped cream, extra bananas, and wafer crumbs.
  11. Chill again for 1 hour before serving.
