For the Crust:
- 2 cups vanilla wafer crumbs
- 1/2 cup melted butter
- 2 tbsp sugar
For the Cheesecake Filling:
- 24 oz cream cheese, softened
- 3/4 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
Banana Pudding Layer:
- 2 ripe bananas, sliced
- 1 cup vanilla pudding (prepared or instant)
- 1 cup whipped cream or whipped topping
- 1 cup crushed vanilla wafers
Topping:
- Extra banana slices
- Whipped cream
- Crushed vanilla wafers
Instructions
- Preheat oven to 325°F (165°C). Grease a springform pan.
- Mix vanilla wafer crumbs, melted butter, and sugar. Press into pan to form crust.
- Bake crust for 8–10 minutes, then cool.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in vanilla and sour cream.
- Pour filling over crust and bake for 50–60 minutes until center is slightly set.
- Cool completely, then refrigerate at least 4 hours.
- Spread vanilla pudding over chilled cheesecake.
- Layer sliced bananas and crushed vanilla wafers.
- Top with whipped cream, extra bananas, and wafer crumbs.
- Chill again for 1 hour before serving.
