Ingredients

• 2 ripe bananas, mashed
• 1 ½ cups almond flour or whole wheat pastry flour
• ½ cup plain Greek yogurt
• ¼ cup pure maple syrup or honey
• 1 package (1 oz) sugar-free vanilla pudding mix
• 1 tsp vanilla extract
• ½ tsp baking soda, pinch of sea salt
• ½ cup crushed vanilla wafers (gluten-free if needed)
• Optional: 2 tbsp dark chocolate chips


Instructions

• Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
• In a bowl, mash bananas, then whisk in Greek yogurt, maple syrup, vanilla, and pudding mix until smooth.
• Gently fold in almond flour, baking soda, and salt until just combined—avoid overmixing for tender cookies.
• Carefully stir in crushed vanilla wafers and chocolate chips if using.
• Scoop tablespoon-sized portions onto the baking sheet, flatten slightly, and bake 10-12 mins until edges are golden.
• Cool 5 minutes on pan, then transfer to a rack—enjoy warm or chilled for a soft, creamy, nostalgic treat!
