For the Fritter Bites:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2/3 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp melted butter
  • 1 cup fresh blueberries
  • Oil for frying

For the Vanilla Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  2. In a separate bowl, whisk milk, egg, vanilla, and melted butter.
  3. Add wet ingredients to dry ingredients and stir just until combined.
  4. Gently fold in the blueberries.
  5. Heat oil in a deep skillet or fryer to 350Β°F (175Β°C).
  6. Drop tablespoon-sized portions of batter into the hot oil.
  7. Fry in batches for 2–3 minutes per side, until golden brown.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Whisk together powdered sugar, milk, and vanilla to make the glaze.
  10. Drizzle glaze over warm fritter bites and serve.
