For the Fritter Bites:
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2/3 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp melted butter
- 1 cup fresh blueberries
- Oil for frying
For the Vanilla Glaze:

- 1 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, whisk milk, egg, vanilla, and melted butter.
- Add wet ingredients to dry ingredients and stir just until combined.
- Gently fold in the blueberries.
- Heat oil in a deep skillet or fryer to 350Β°F (175Β°C).
- Drop tablespoon-sized portions of batter into the hot oil.
- Fry in batches for 2β3 minutes per side, until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- Whisk together powdered sugar, milk, and vanilla to make the glaze.
- Drizzle glaze over warm fritter bites and serve.
