For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tbsp sugar

For the Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the Apple Topping:

  • 3 medium apples, peeled and sliced
  • 2 tbsp butter
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice

For the Caramel:

  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 325ยฐF (165ยฐC). Grease a springform pan.
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into the pan to form crust.
  3. Bake crust for 8โ€“10 minutes, then set aside.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, then mix in vanilla and sour cream.
  6. Pour filling over crust and bake for 50โ€“60 minutes until center is slightly set.
  7. Cool completely, then refrigerate for at least 4 hours.
  8. In a skillet, cook apples with butter, brown sugar, cinnamon, and lemon juice for 6โ€“8 minutes until tender.
  9. Spoon apples over chilled cheesecake.
  10. Drizzle generously with caramel sauce before serving.
