- 1 1/2 cups graham cracker crumbs
- 1/3 cup coconut oil, melted
- 2 tbsp maple syrup
Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup Greek yogurt
- 1/3 cup maple syrup
- 2 large eggs
- 1 tsp vanilla extract
Apple Topping:
- 2 large apples, peeled and sliced
- 1 tbsp coconut oil
- 1 tsp cinnamon
- 1 tbsp maple syrup
Caramel Sauce:
- 1/2 cup coconut cream
- 1/4 cup maple syrup
- 1 tbsp coconut oil
- Pinch of salt
Instructions
- Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs, coconut oil, and maple syrup. Press into pan to form crust.
- Bake crust for 8 minutes, then cool.
- Beat cream cheese until smooth, then mix in Greek yogurt, maple syrup, eggs, and vanilla.
- Pour filling over crust and bake for 40–45 minutes until slightly set.
- Let cool completely, then refrigerate for at least 4 hours.
- In a skillet, cook apples with coconut oil, cinnamon, and maple syrup until soft and caramelized.
- For caramel sauce, simmer coconut cream, maple syrup, coconut oil, and salt until thickened.
- Top chilled cheesecake with warm apples and drizzle with caramel sauce before serving.
