- 40 Ritz crackers
- 1 cup soft caramel candies, unwrapped
- 2 tbsp heavy cream
- 1 cup roasted salted peanuts, chopped
- 1 1/2 cups milk chocolate chips
- 1 tbsp coconut oil or shortening

- Sea salt for sprinkling (optional)
Instructions
- Line a baking sheet or tray with parchment paper.
- Arrange half of the Ritz crackers on the tray.
- In a microwave-safe bowl, melt caramels and heavy cream in 30-second intervals, stirring until smooth.
- Spoon a small amount of caramel onto each cracker.
- Sprinkle chopped peanuts over the caramel.
- Top with the remaining Ritz crackers to form sandwiches.
- In another bowl, melt chocolate chips and coconut oil until smooth.
- Dip each cracker sandwich halfway or fully into the melted chocolate.
- Place on the parchment-lined tray and sprinkle with a little sea salt if desired.
- Refrigerate for 20β30 minutes until the chocolate is set.
