For the Apples:
- 4 large apples (Honeycrisp, Fuji, or Gala)
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 2 tbsp brown sugar
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup graham cracker crumbs
For the Crumble Topping:
- 1/2 cup graham cracker crumbs
- 2 tbsp brown sugar
- 2 tbsp melted butter
- 1/2 tsp cinnamon
Optional Garnish:

Instructions
- Preheat oven to 350Β°F (175Β°C).
- Slice the tops off apples and carefully hollow out the centers, leaving a sturdy shell.
- Brush apples with lemon juice and sprinkle with cinnamon and brown sugar.
- In a bowl, mix cream cheese, powdered sugar, vanilla, and graham cracker crumbs until smooth.
- Fill each apple generously with cheesecake mixture.
- In a separate bowl, combine crumble ingredients until sandy.
- Sprinkle crumble over the filled apples.
- Place apples in a baking dish and bake for 25β30 minutes until tender.
- Let cool slightly before serving.
- Drizzle with caramel and top with whipped cream if desired.
