For the Apples:

  • 4 large apples (Honeycrisp, Fuji, or Gala)
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 2 tbsp brown sugar

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup graham cracker crumbs

For the Crumble Topping:

  • 1/2 cup graham cracker crumbs
  • 2 tbsp brown sugar
  • 2 tbsp melted butter
  • 1/2 tsp cinnamon

Optional Garnish:

  • Caramel drizzle
  • Whipped cream
  • Chopped pecans

Instructions

  1. Preheat oven to 350Β°F (175Β°C).
  2. Slice the tops off apples and carefully hollow out the centers, leaving a sturdy shell.
  3. Brush apples with lemon juice and sprinkle with cinnamon and brown sugar.
  4. In a bowl, mix cream cheese, powdered sugar, vanilla, and graham cracker crumbs until smooth.
  5. Fill each apple generously with cheesecake mixture.
  6. In a separate bowl, combine crumble ingredients until sandy.
  7. Sprinkle crumble over the filled apples.
  8. Place apples in a baking dish and bake for 25–30 minutes until tender.
  9. Let cool slightly before serving.
  10. Drizzle with caramel and top with whipped cream if desired.
