Cinnamon Apple Donuts: Soft, Cozy, and Bursting with Fall Flavor

Ingredients

  • 1½ cups whole wheat pastry flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp sea salt
  • 1 cup unsweetened applesauce
  • ½ cup finely diced apple
  • ⅓ cup maple syrup
  • 2 large eggs
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract

Cinnamon Coating:

  • 2 tbsp coconut sugar
  • 1 tsp ground cinnamon
  • 1 tbsp melted coconut oil

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk the applesauce, diced apple, maple syrup, eggs, coconut oil, and vanilla until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Spoon or pipe the batter into the prepared donut pan, filling each cavity about three-quarters full.
  6. Bake for 15–18 minutes, or until the donuts spring back when lightly touched.
  7. Allow the donuts to cool for 5 minutes before removing them from the pan.
  8. Brush each donut lightly with melted coconut oil and coat with the cinnamon-coconut sugar mixture.
  9. Serve warm or at room temperature.
