- 1½ cups whole wheat pastry flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp sea salt
- 1 cup unsweetened applesauce
- ½ cup finely diced apple
- ⅓ cup maple syrup
- 2 large eggs
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
Cinnamon Coating:
- 2 tbsp coconut sugar
- 1 tsp ground cinnamon
- 1 tbsp melted coconut oil
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a donut pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk the applesauce, diced apple, maple syrup, eggs, coconut oil, and vanilla until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Spoon or pipe the batter into the prepared donut pan, filling each cavity about three-quarters full.
- Bake for 15–18 minutes, or until the donuts spring back when lightly touched.
- Allow the donuts to cool for 5 minutes before removing them from the pan.
- Brush each donut lightly with melted coconut oil and coat with the cinnamon-coconut sugar mixture.
- Serve warm or at room temperature.
