Cake base:

  • 1½ cups all-purpose flour (or 1¼ cups almond flour + ¼ cup coconut flour for GF/low-carb—you love this!)
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened (you love buttery richness!)
  • ¾ cup granulated sweetener (monk fruit blend—you love blood sugar friendly!)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk or unsweetened almond milk

Cinnamon swirl:

  • ¼ cup granulated sweetener (monk fruit blend)
  • 1½ tbsp ground cinnamon
  • 2 tbsp melted butter

Cream cheese glaze:

  • 4 oz (½ block) full-fat cream cheese, softened (you love cream cheese!)
  • ¼ cup powdered sweetener (powdered erythritol or monk fruit blend)
  • 12 tbsp milk or almond milk
  • ½ tsp vanilla extract

Instructions

1. Prep & mix batter:

  1. Preheat oven to 350°F (175°C). Grease an 8×8″ or 9×9″ pan; line with parchment.
  2. Whisk flour, baking powder, and salt.
  3. Beat butter and sweetener until light (~2 min). Add eggs one at a time, then vanilla.
  4. Alternately add dry ingredients and milk, beginning and ending with flour. Mix until just combined.

2. Make swirl:

Mix sweetener and cinnamon. Drizzle melted butter over half the batter in pan; sprinkle cinnamon mix on top. Swirl gently with knife.

3. Bake:

Pour remaining batter over swirl; spread evenly. Bake 28–32 minutes until toothpick comes out clean. Cool 15 minutes.

4. Glaze & serve:

Whisk glaze ingredients until smooth. Drizzle over warm cake. Slice and enjoy!
