Coconut Protein Cookies: A Healthy, Low-Carb Treat for Any Time of Day

Ingredients

INGREDIENTS:
🥥 1.5 cups shredded coconut flakes
🥜 ½ cup sunflower seeds (or nuts of choice)
💪 ½ cup collagen (or preferred protein powder)
🍬 10–15 drops liquid stevia or monk fruit sweetener
🌿 1 teaspoon vanilla extract
🌱 1 teaspoon Ceylon cinnamon
🥥 2 tablespoons coconut oil
💧 1/8 cup water


Instructions

Preheat oven to 300°F. Chop sunflower seeds in a blender. Mix all ingredients in a bowl; adjust with coconut oil and water if too crumbly. Scoop into 18 cookies, flatten slightly, and bake for 15 minutes until bottoms are browned.
