- 3 ripe bananas, mashed
- 2 large eggs
- 1/3 cup coconut oil, melted
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt
Cream Cheese Filling:
- 8 oz cream cheese, softened
- 1 large egg
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix mashed bananas, eggs, coconut oil, maple syrup, and vanilla.
- In another bowl, combine flour, baking soda, cinnamon, and salt.
- Stir dry ingredients into wet ingredients until just combined.
- In a separate bowl, beat cream cheese, egg, maple syrup, and vanilla until smooth.
- Pour half the banana bread batter into the loaf pan.
- Spread cream cheese filling evenly on top.
- Add remaining banana batter over the filling.
- Bake for 50–60 minutes, or until a toothpick comes out clean from the bread layer.
- Cool completely before slicing for clean layers.
