- 2 large apples, cored and sliced into rings
- 1 cup whole wheat flour
- 1 tsp cinnamon
- 1 tsp baking powder
- ¼ tsp salt
- 1 egg
- ½ cup unsweetened almond milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp coconut oil (for baking or brushing)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, whisk flour, cinnamon, baking powder, and salt.
- In another bowl, mix egg, almond milk, maple syrup, and vanilla extract.
- Combine wet and dry ingredients to form a light batter.
- Dip apple rings into the batter, coating evenly.
- Place on the baking sheet and lightly brush with coconut oil.
- Bake for 15–18 minutes until golden and crisp, flipping halfway if needed.
- Let cool slightly before serving.
