  • 2 large apples, cored and sliced into rings
  • 1 cup whole wheat flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • ½ cup unsweetened almond milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil (for baking or brushing)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, cinnamon, baking powder, and salt.
  3. In another bowl, mix egg, almond milk, maple syrup, and vanilla extract.
  4. Combine wet and dry ingredients to form a light batter.
  5. Dip apple rings into the batter, coating evenly.
  6. Place on the baking sheet and lightly brush with coconut oil.
  7. Bake for 15–18 minutes until golden and crisp, flipping halfway if needed.
  8. Let cool slightly before serving.
