  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 eggs
  • ¼ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • ¼ cup almond milk

Cheesecake Layer:

  • 8 oz light cream cheese, softened
  • ½ cup Greek yogurt
  • ¼ cup maple syrup
  • 1 tsp vanilla extract

Chocolate Topping:

  • ½ cup dark chocolate chips
  • 2 tbsp almond milk
  • 1 tsp coconut oil

Instructions

  1. Preheat oven to 350°F (175°C) and line a round cake pan.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Mix eggs, maple syrup, coconut oil, vanilla, and almond milk until smooth.
  4. Combine wet and dry ingredients and pour into pan.
  5. Bake for 18–20 minutes, then cool completely.
  6. Beat cream cheese, Greek yogurt, maple syrup, and vanilla until smooth.
  7. Spread cheesecake layer over cooled cake base.
  8. Melt chocolate chips with almond milk and coconut oil until glossy.
  9. Pour chocolate topping over cheesecake layer.
  10. Chill for at least 2 hours before slicing.
