Cheesecake Layer:
- 8 oz light cream cheese, softened
- ½ cup Greek yogurt
- ¼ cup maple syrup
- 1 tsp vanilla extract
Chocolate Topping:
- ½ cup dark chocolate chips
- 2 tbsp almond milk
- 1 tsp coconut oil
Instructions
- Preheat oven to 350°F (175°C) and line a round cake pan.
- Whisk flour, baking powder, and salt in a bowl.
- Mix eggs, maple syrup, coconut oil, vanilla, and almond milk until smooth.
- Combine wet and dry ingredients and pour into pan.
- Bake for 18–20 minutes, then cool completely.
- Beat cream cheese, Greek yogurt, maple syrup, and vanilla until smooth.
- Spread cheesecake layer over cooled cake base.
- Melt chocolate chips with almond milk and coconut oil until glossy.
- Pour chocolate topping over cheesecake layer.
- Chill for at least 2 hours before slicing.
