Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/3 cup peanut butter
  • 1/3 cup coconut oil, melted
  • 3/4 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and line a 12-cup muffin tin with liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk eggs, maple syrup, peanut butter, coconut oil, milk, and vanilla extract until smooth.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Fold in chocolate chips.
  6. Divide batter evenly among muffin cups, filling each about 3/4 full.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
