Ingredients

  • 2 cups quick oats
  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1/2 cup cocoa powder
  • 1 1/2 cups sugar
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract

 

  • 1/2 cup mini chocolate chips

Instructions

  1. Line a baking sheet or tray with parchment paper.
  2. In a saucepan over medium heat, combine butter, milk, cocoa powder, and sugar.
  3. Bring the mixture to a gentle boil and cook for 1 minute, stirring constantly.
  4. Remove from heat and stir in peppermint extract and vanilla extract.
  5. Add oats and mix until well coated.
  6. Let the mixture cool for 2 minutes, then fold in chocolate chips.
  7. Drop spoonfuls of the mixture onto the prepared parchment paper.
  8. Allow cookies to set at room temperature for 30 minutes or refrigerate until firm.
  9. Serve and enjoy.
