- 2 cups quick oats
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/2 cup cocoa powder
- 1 1/2 cups sugar
- 1 tsp peppermint extract
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Line a baking sheet or tray with parchment paper.
- In a saucepan over medium heat, combine butter, milk, cocoa powder, and sugar.
- Bring the mixture to a gentle boil and cook for 1 minute, stirring constantly.
- Remove from heat and stir in peppermint extract and vanilla extract.
- Add oats and mix until well coated.
- Let the mixture cool for 2 minutes, then fold in chocolate chips.
- Drop spoonfuls of the mixture onto the prepared parchment paper.
- Allow cookies to set at room temperature for 30 minutes or refrigerate until firm.
- Serve and enjoy.
