For the Crust:
- 1½ cups almond flour
- 2 tbsp cocoa powder
- 2 tbsp coconut oil, melted
- 2 tbsp maple syrup
- ¼ tsp salt
For the Filling:
- 1 cup natural peanut butter
- ½ cup Greek yogurt
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ½ cup light cream cheese, softened
- 2 tbsp almond milk
Optional Topping:
- 2 tbsp dark chocolate chips, melted
- 1 tbsp chopped peanuts
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a pie dish.
- In a bowl, mix almond flour, cocoa powder, coconut oil, maple syrup, and salt until crumbly.
- Press mixture firmly into the pie dish to form the crust.
- Bake for 8–10 minutes, then let cool completely.
- In another bowl, beat peanut butter, Greek yogurt, cream cheese, maple syrup, vanilla, and almond milk until smooth and creamy.
- Pour filling into the cooled crust and spread evenly.
- Drizzle melted chocolate over the top and sprinkle with chopped peanuts if using.
- Refrigerate for at least 3 hours until set.
- Slice and serve chilled.
