Ingredients
• Crust: 1 ½ cups almond flour, ¼ cup melted coconut oil, 2 tbsp sugar-free sweetener, pinch sea salt
• Filling: ½ cup natural creamy peanut butter, ¼ cup plain Greek yogurt, 3 tbsp pure maple syrup or sugar-free sweetener, 1 tsp vanilla extract
• Topping: ⅓ cup dark chocolate chips (70% cacao), 1 tsp coconut oil, pinch flaky sea salt
Instructions
• Preheat oven to 325°F (165°C). Line an 8×8 pan with parchment paper for easy removal.
• Mix crust ingredients until crumbly; press firmly into pan and bake 8-10 mins until lightly golden.
• Whisk peanut butter, Greek yogurt, sweetener, and vanilla until smooth; pour over warm crust and spread evenly.
• Chill 15 minutes to set the creamy peanut butter layer before adding the rich chocolate topping.
• Melt dark chocolate chips with coconut oil; drizzle over chilled filling and sprinkle with flaky sea salt.
• Refrigerate 1-2 hours until firm, then slice into 12 gooey bars and store chilled for perfect texture!
