  • 2 medium apples, peeled and finely diced
  • 1 cup rolled oats
  • ¾ cup whole wheat flour
  • ¼ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 1 tbsp chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 24-cup mini muffin pan.
  2. In a bowl, combine oats, flour, cinnamon, nutmeg, and salt.
  3. Stir in maple syrup, coconut oil, and vanilla until a crumbly dough forms.
  4. Reserve ½ cup of the mixture for the topping.
  5. Press the remaining mixture into the mini muffin cups to create small shells.
  6. Toss the diced apples with a pinch of cinnamon and fill each shell.
  7. Sprinkle the reserved crumble mixture and chopped pecans over the apples.
  8. Bake for 18–20 minutes, or until the tops are golden and the apples are tender.
  9. Let cool in the pan for 10 minutes before carefully removing and serving.
