- 2 medium apples, peeled and finely diced
- 1 cup rolled oats
- ¾ cup whole wheat flour
- ¼ cup maple syrup
- ¼ cup coconut oil, melted
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ½ tsp vanilla extract
- ¼ tsp salt
- 1 tbsp chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 24-cup mini muffin pan.
- In a bowl, combine oats, flour, cinnamon, nutmeg, and salt.
- Stir in maple syrup, coconut oil, and vanilla until a crumbly dough forms.
- Reserve ½ cup of the mixture for the topping.
- Press the remaining mixture into the mini muffin cups to create small shells.
- Toss the diced apples with a pinch of cinnamon and fill each shell.
- Sprinkle the reserved crumble mixture and chopped pecans over the apples.
- Bake for 18–20 minutes, or until the tops are golden and the apples are tender.
- Let cool in the pan for 10 minutes before carefully removing and serving.
